Quinoa and Ratatouille stuffed Portobellos | Cogumelos Portobello com Ratatouille e Quinoa

We are very excited for publishing our first post EVER!!! Therefore, nothing better than to start with one of our favorite healthy recipes of the moment!


You will need:

  •  4 Portobello mushrooms
  •  1 Eggplant
  •  1 Courgette
  •  3 Tomatoes
  •  ½ Red bell pepper
  •  ½ Green bell pepper
  •  ½ Onion
  •  1 Garlic clove
  •  ½ Cup of quinoa tea
  •  Thyme
  •  2 Bay leaves
  •  Salt
  •  Pepper (for seasoning)
  •  Olive oil
  •  Coriander to decorate (optional)
Ingredients you will need
  1. Empty the mushrooms. In an oven baking plate, seasoning with a little bit of olive oil, and display the mushrooms. Put it in the oven and let them cook at 180C for 10-15minutes.
  2. For the vegetables ratatouille:

1 – Cut the onions, peppers, courgette, tomatoes (seedless), and the eggplant in brunoise cut (regular cut and the same size). Mince the garlic.


2- Add a little bit of olive oil in the  bottom of a frying pan (enough for a stew) and heat.

3- Add an extra table spoon of olive oil, and the garlic, onion, both red and green bell peppers and eggplant. Add a bit of thyme and bay leaf, and season with salt and pepper. Simmer for 5 minutes.

4- Add the tomatoes and cook for 10 minutes.

5- Finally, add the courgette and cook for another 5 minutes.

6- In a saucepan boil water and add the quinoa. Season with salt and let it cook for 18 minutes. Drain and cool.


7- Add the quinoa to the vegetables in a frying pan, and mix for 1 minute.

8- Take the mushrooms from the oven, fill them with the vegetables mix and serve. Voilá!

Olá a todos! Estamos muito entusiasmadas com a nossa PRIMEIRA publicacão!!! E como tal, decidimos que partilhar uma das nossas receitas favoritas (do momento) seria o ideal. Simples e saudável!

Vão precisar de:

  •  4 Cogumelos Portobello
  •  1 Beringela
  •  1 Courgette
  •  3 Tomates
  •  ½ Pimento vermelho
  •  ½ Pimento verde
  •  ½ Cebola
  •  1 Dente de alho
  •  ½ Chávena de chá de quinoa
  •  Tomilho q.b.
  •  2 Folhas de louro
  •  Sal
  •  Pimenta
  •  Azeite
  •  Coentros para decorar (opcional)
Ingredientes que vão precisar
  1. Limpar o interior dos cogumelos. Colocar um fio de azeite e os cogumelos num pirex e levar ao forno a 180 graus, durante 10-15 min.
  2. Ratatouille de legumes:

1- Cortar a cebola, os pimentos, a courgette, os tomates (sem grainhas) e a beringela em brunesa (corte regular e do mesmo tamanho). Picar o alho.


2- Colocar o azeite no fundo de um tacho (o suficiente para um estufado) e aquecer.

3- Adicionar ao azeite, a cebola, os pimentos, a beringela e o alho. Juntar o tomilho e louro, e temperar com sal e pimenta. Deixar cozinhar durante 5 minutos.

4- Adicionar o tomate e deixar cozinhar durante 10 minutos.

5-  Por fim, adicionar a courgette e deixar cozinhar mais 5 minutos.

6- Cozer a quinoa em água e temperar com sal durante 18 minutos. Escorrer e deixar arrefecer.

8- Retirar os cogumelos do forno, recheá-los com o preparado, e servir. Voilá!
