Fall Soup | Sopa de Outono

Hello beautiful friends! It’s now that time of the year in which we start replacing the salads for a warm cozy soup 🙂 At least I do! Therefore today I’ve decided to share one of my favorite soup recipes, super delicious, nutritious and the best part… super easy to do!

Ingredients:

  • 1 medium carrot
  • 1 small portion of pumpkin
  • 1 courgette
  • 2 red big tomatoes (3 in case they are small)
  • 2 onions
  • 1 garlic clove
  • Bunch of coriander (optional)
  • Salt (your choice)
  1. Bring around 1L of water to boil in a big pan.
  2. Chop all the ingredients into small pieces (apart from the coriander) and put them in the pan to boil.
  3. Once they are boiled, grind with a hand blender.
  4. Insert the bunch of coriander in the mixture and let it boil for another 5-7 minutes (mix the flavors.
  5. Remove the bunch of coriander and enjoy your soup!
  6. Garnish with fresh coriander or thyme.

Olá gente gira! Chegou a altura do ano em que comecamos a trocar as saladas frescas por uma sopa aconchegante, pelo menos eu sou assim 🙂 De forma que hoje partilho uma das minhas sopas preferidas, super deliciosa, nutritiva e a melhor parte… super fácil de fazer!

Ingredientes:

  • 1 cenoura média
  • 1 porcao pequena de abóbora
  • 1 courgette
  • 2 tomates maduros grandes (usar 3 caso sejam pequenos)
  • 2 cebolas
  • 1 dente de alho
  • Ramo de coentros (opcional)
  • Sal (a gosto)
  1. Ferver cerca de 1Litro de água numa panela .
  2. Cortar todos os ingredientes (excepto o ramo de coentros)em pequenos cubos e deixar cozer.
  3. Quando estiver tudo cozido, triturar os vegetais com a varinha mágica.
  4. Adicionar o ramo de coentros ao puré e deiar cozer durante 5-7 minutos, de forma a incorporar o sabor.
  5. Remover o ramo de coentros e está pronta a sopa!
  6. Decorar o prato com coentros ou tomilho a gosto.
