Day3: 3 Healthy Brunch Ideas

Hello beautiful friends,

Breakfast is my favorite meal of the day and therefore on Sundays I always take time to enjoy my mornings having a healthy brunch, either at home or at my favorite pleaces in town. Today I’m sharing a few of my lazy homemade brunch ideas and recipes.

Brunch at Bagels & Beans

 

1. Smoked salmon and avocado toast

Recipe: Toast two slices of low carb wheat bread, spread with ripe avocado, top with rucula, smoked salmon, cherry tomato and radishes. Add just a tea spoon of cottage cheese and sprinkle all around with fresh oreganos.

2. Eggs

Option 1: Scrambled eggs

 

Recipe: In a plate mix your favorite combos, mine is: Sauteed spinach, scrambled eggs (1 egg plus 1 egg white), a slice of smoked salmon, half avocado, asparagus, rucula and herry tomato.

Option 2: Replace the scrambled eggs by a poached egg.

3. Protein Pancakes

Recipe: 1 banana, 1 egg, 1 egg white, 2tb spoons of oatmeal, cinnamon. Blend it all together and cook it in hot pan sprayed with coconut oil.
